The Brazzle pizza history

The Brazzle Pizza story begins in South America with our founder Luana’s family recipe for delicious Brazilian cheese bread, or pao de queijo, made from naturally gluten-free cassava flour (also known as tapioca). After coming to America many years ago, Luana would always delight friends, family, and neighbors with plates of these cheesy treats at gatherings, BBQs, and events in the Los Angeles area. Her cheese bread was always a guaranteed hit. Kids, grownups, people from various countries and cultures, people would always exclaim “Mmmm!” and ask about the recipe.

From there, an idea sprouted to try to transform this traditional cheese bread recipe into something new, something unique. Luana wanted to take this classic Brazilian snack staple to the next level. But how? The AHA! moment came as Luana wondered if she could combine the comforting, cheesy goodness of Brazilian cheese bread with another classic everybody loves, pizza!

Luana worked her imagination and kitchen appliances day and night, brainstorming and testing ideas for adapting the cheese bread into a pizza crust. After much experimentation, she hit upon a recipe blending premium cassava flour and fine Italian parmesan cheese, crafted into a distinctive waffled pizza base. The result is the ideal balance of crispy and cheesy textures and flavors in a mouthwatering cheese bread crust, topped with classic pizza ingredients and baked to perfection!
